At Black Market Roasters we like analogies to explain the complexities of coffee as we know not everyone is as nerdy as us…Think back to when you picked up a crisp, shiny Pink Lady apple, bit into it and the juice dribbled out your mouth, the sweetness and slight sour zing mix to give you a fantastic mouthfeel that sees you polish off the whole apple in no less than 30 seconds! Now, think back to when you picked up another apple, it was dull, darker in colour. You bite into it and it is green inside, you almost lose your tooth as it is so hard and the sourness is unbearable. Or worse you get a mouthful of dry, tasteless flour-like mouthfeel.
This is exactly like the world of coffee. The reason why that Pink Lady apple is so good, is that they start with an amazing varietal of apple, nurture the plant, ensuring it grows at optimum conditions then harvest it at the right time, in the right way, then send to market fresh and ready to eat.
We like to know where all our coffee comes from, where it is grown, who grew it, what elevation, how it was processed and importantly how it tastes when it hits our shores. The coffee we buy tends to earn the farmers a lot more money than many of the mainstream coffee buyers would give.
