Salted Caramel Iced Latte Recipe (No Espresso Machine Needed)

Last week we handed our Marrickville café over for the day to fifteen young women finishing our From the Ground Up program with Youth Off the Streets. After a week learning the ropes, they ran the bar themselves and served the local community free coffee to put their new skills to the test. It was packed, and we needed something cold and fast we could pour without slowing the queue. This recipe is what we landed on.

How to make iced coffee without a machine

Coffee concentrate is the shortcut. No espresso machine, no grinding, no waiting for hot coffee to cool down over ice. You pour it over ice with milk and whatever else you're adding, and you've got proper iced coffee in about thirty seconds. We use our own BOOM cold brew concentrate for this. It's cold brewed rather than hot brewed, so it's naturally smoother and holds up over ice without going watery or bitter. Here's the version we served on the day. It disappeared fast.

• 70ml BOOM cold brew concentrate
• 50ml caramel syrup
• 200ml oat milk
• A pinch of salt
• Plenty of ice

Ice in first, then the BOOM, caramel and milk, and stir. That's it.

Once you've got the base down, it's easy to build your own version. Less caramel for something more coffee-forward, a different milk, vanilla instead of caramel, or coconut for something different again. There's no wrong way to make it.
