NOTE FROM ROASTER | Perched on Tecapa Volcano, Los Pirineos offers stunning views and ideal coffee drying conditions with abundant sunlight and airflow. The Baraona family, in partnership with Project Origin, employs meticulous processing: ripe cherries are fermented briefly with CO2, then shade-dried to perfect moisture levels. The result is a vibrant cup with notes of pineapple, peach, and nectarine, consistently featured in our selections.
