Why is it that, no matter how great a café or Barista is, there is considerable inconsistency between brews? Step 2 is a simple set of parameters that require a specific skill set. One that means the Barista needs to have attention to detail, is committed to the flavour objectives of the café and can do it quickly. This is often different from the conversational barista that is looking at the attractive customers more than the shot timers or weighing their shots. It is crucial to start with consistently amazing coffee if that is what your café wants to achieve, then add another layer of customer service.
